New Executive Chef brings New Flavors & Menus to Pike

Chartwells K12 and Metropolitan School District of Pike Township are proud to announce, Chef Samuel Brown has joined the district’s team of food service professionals as Executive Chef. Samuel Brown brings over 15 years of culinary experience, with success in kitchen supervision, menu development, budget administration, cost control, sanitation, training and service.

Chef Sam will bring a new culinary experience to Pike Township students while operating under the philosophy that food is the one thing that connects all humans on a global level. Understanding that the best memories in life often involve food, Chef Sam will ensure that the quality of food and great service served to the students of Pike Township will have a positive impact on their learning day and academic success.

“My goal as an Executive Chef for Chartwells K12 and the Metropolitan School District of Pike Township is to teach the staff and students about where food comes from, best techniques for culinary excellence and sustainability (RECYCLING AND COMPOST), We will accomplish this thru the spirit of teamwork, and diversity. One child, one teacher, one family and one school at a time. Proper nutrition is Very Important”

 New Menus

Alongside Chartwells K12’s registered dietitian, Samantha Budnik, Chef Samuel Brown has cooked up a freshly-inspired menu for the 2015-16 school year designed specifically for Metropolitan School District of Pike Township students. This year’s menus include a wide array of healthy and delicious options. These menus were created using student input from surveys, tastings and everyday conversations. The new menu includes:

  • Sizzling Chicken Fajitas – sizzling chicken with onions and peppers, served with whole grain tortilla and ready for your choice of toppings. Usually paired with Mexican-style rice and beans.

  • Apple Yogurt Side Salad – fresh diced apples tossed with yogurt, honey, 100% orange juice, and cinnamon.

  • Beef Lasagna – whole grain elbow noodles layered and baked with a flavorful, homemade tomato sauce, lean ground beef, and blend of low-fat mozzarella and parmesan cheeses.

  • Sweet and Sour Kale Salad – super-powered kale teams up with tart dried cranberries, cheddar, garbanzo beans and a homemade dressing for a salad that is out of this world!

  •  Chipotle Cinnamon Pork Tacos – call it anything but boring! Our tacos feature authentic flavors with a sweet and spicy kick, served in whole grain tortillas.

Throughout the year Chartwells K12 will hold chef- and registered dietitian-led tastings with students to talk to students about new healthy foods and ingredients. Chef Sam, his team and guest chefs from the community will also visit schools through the Chefs2Schools program to help students engage with healthy foods and learn how to eat well for a lifetime.
